00:00Mula sa nakanginginig tuhod na adventure na Hilico,
00:03tadahin muna tayo ni Chef JR sa kanyang playground sa harap ng kalad.
00:09Host ng programang Farm to Table,

00:14So ganun lang kasimple yung ating mga ingredients.

00:18At ang una niyang ipatitingin sa atin,

00:26So ito yung ating pinunig.
00:27This is a delicacy dito sa amin sa Mountain Province, Benguet,
00:32kung saan it is one way of our culture na pinapakita
00:37kung paano namin ina-appreciate yung sacrificial ng ingredient natin,
00:41ating pork.
00:42So sa amin kasi walang tapon.
00:45It's a mortal sin na may i-discard kang ingredients
00:49or hindi kakainin.
00:50So sa amin, para ma-repurpose yung mga innards,
00:54yung ibang parte ng baboy na siguro walang ibang putahe mapaglalagyan,
01:02dito namin siya sinisiksik lahat.
01:03Yung general ingredients lang ng pinunig is definitely dugo.
01:07Yung pinakaginagamit nating casing dito is yung pinakabitukan niya talaga.
01:11Some might actually say na medyo intimidating yung itsura ng ating pinunig.
01:19So for this recipe, gagawan lang natin siya ng ibang interpretation.
01:24So I'm just poking holes here,
01:27just like what you would wanna do in any sausage na lulutuin mo.
01:30This will prevent na pumutok siya while we're cooking it.
01:33So I'm using here yung ating pork.
01:36And since ito yung pinakamatagal maluto na component ng ating dish,
01:39puunahin na natin siyang isalak.
01:41Kanyan lang din natin siya ng tubig.
01:42Kapag nag-reduce na or nag-evaporate na yung sabaw na nilagay natin kanina,
01:48tulungan lang natin ng manika.
01:55So habang tinatapos natin yung ating pinunig,
01:57prepare na natin yung ating batter.
01:59So we have here all-purpose flour.
02:01Lagyan lang natin ito ng baking powder para umalsa siya.
02:05Some salt.
02:06And yung ating wet ingredient, yung ating eggs.
02:09Mixed lang natin ito.
02:14Once we have our batter ready,
02:17pwede na natin ilagay din sa pan.
02:20Cover lang din natin para mas umalsa yung ating batter.
02:30So more or less mga 5 to 8 minutes after natin siyang i-flip kanina,
