This melt-in-your-mouth vegetarian side dish will give melting potatoes a run for their money. In this video, Chloe shows you how to make melting beets with goat cheese and fresh dill. After being peeled and sliced, the beets are double roasted in the oven with a flavorful balsamic and vegetable stock mixture. 00:02Melting beets are even better than the potato, and they're prettier.
00:05Beets are the best.
00:06Just peel and slice up some beets, coat them with olive oil, dill, salt, and pepper.
00:11Then they go into a 9x13 and roast until tender.
00:14Meanwhile, we're mixing up a little vegetable stock and balsamic that gets poured over the beets
00:18until they go back in the oven and soak it all up.
00:21When they're done, goat cheese and more fresh dill go perfectly with these.
00:26They're so melt-in-your-mouth soft that you can eat them with a spoon.
