00:00We all know how much it tastes like beer, but this is like elevating it to the next level.

00:09Pop by Pickle Dining, a stylish restaurant featuring delectable dishes

00:22Founded by Chef Daniel Falbi, Pickle Dining's unique menu combines
00:27French culinary techniques with global inspirations.
00:33The whole idea of pickle is actually putting two of my interests together,
00:38two of my ambitions I would say.
00:40One is cooking and the other one is actually archaeology.
00:43I love history, I actually wanted to be a paleontologist at first.
00:46Pickle is about using old techniques, old recipes
00:51from different cultures around the world and bringing it to a modern sense.
00:56The charming chef has quite an adventurous palate
00:59and has worked in restaurants in Paris, New York, London and Singapore.
01:05Part of the joy dining here comes from its open kitchen
01:08where you can watch Falbi and his team bring their menu to life.
01:13I just like having local flavours incorporated in everything.
01:17It's all about being sustainable, locally grown so there's no carbon impact.
01:25Also celebrating what we do good, what we do best.
01:34The highlight here is the fantastically flavoured starter,
01:37Sanchok Espuma with pear compote.
01:40Dig your spoon right to the very bottom of the bowl for full flavour.
01:49Savour the zesty tang of the Hokkaido scallop ceviche
01:53or dig into the simple yet succulent lacto-fermented tomato.
02:01That is nice.
02:02It looks very simple but it packs a punch.
02:06This is really nice.
02:09Their sea bream with smoked muscat cream is yet another treat
02:13while their tender Angus beef cheek blends excellently
02:16with celeriac puree and turmeric sauerkraut
02:19resulting in a brilliant symphony of flavours.
02:26Finish off your meal with the exquisite chocolate mousse
02:30or a fluffy cinnamon beignet, a dish inspired by Falbi's childhood memories.
02:46So good.
02:50The olive oil really works.
02:55Overall, pickle dining is a testament that ancient cooking techniques
02:59can still strike a chord with modern diners.
