00:00 Kimchi is a wonderful superfood which I strongly recommend to my friends, family and certainly my patients.
00:08 This Korean delicacy is packed full of essential nutrients such as fiber, minerals, vitamins and natural phytochemicals which have enormous health benefits.
00:19 But most importantly, because it's fermented, it's packed full of friendly bacteria such as lactobacillus which significantly improve the health of our gut.
00:29 There's lots of different varieties but on the whole it's made from Chinese cabbage, carrots, herbs and spices such as garlic and chilli.
00:37 It's then mixed with salt and then fermented and this process creates the wonderful lactobacillus bacteria.
00:45 These bacteria, often referred to as friendly bacteria, reduce inflammation in the gut.
00:52 And when they combine with the phytochemical rich foods in kimchi, they grow and they displace the unhealthy or bad bacteria.
01:01 So they improve the health of the gut wall, improving the integrity.
01:06 If you have overgrowth of the unhealthy bacteria, the gut wall becomes thin and leaky.
01:14 So toxins can leak into the bloodstream and healthy nutrients such as vitamins, minerals and proteins can actually leak out.
01:24 When too many toxins leak into the bloodstream, it elicits a strong inflammatory response and over time this will lead to a host of chronic degenerative conditions.
01:35 The taste of kimchi might seem a bit unusual at first but it really does taste nice.
01:41 And looking after your gut is one of the most single important things you can do to improve your well-being now and protect your future health.
01:50 As well as other measures to improve gut health, it's really a good idea to try and include some kimchi in your everyday diet.
02:00 It's a particularly good idea to try and combine a tablespoonful of kimchi with your breakfast or lunch every day.
02:07 In particular, combine with other foods which have prebiotic properties such as mushrooms, olives, rocket salad and sourdough bread.
